Sharon and Valerie’s mouth-watering comments swayed me and we had parmesan aubergine for dinner last night.  Having decided to go with Valerie’s suggestion of roasting the beetroot (I thought that would go well with our beef on Sunday), I then found myself in need of soup to serve a lunch guest yesterday, so the borscht won.  We have enough to see us through lunch today as well, and to my surprise neither the kitchen nor I have turned purple.
