spring greens and wet garlic

I varied one of the recipes that came with our veg box and cooked the spring greens with the wet (fresh) garlic.  It was yummy.  Seriously scrumptiously deliciously incredibly yummy.  Steal from everyone else’s plates type yummy.  Here is the recipe I used (the original is by a Jane Baxter, is a bit fancier and includes parmesan):

  • Take butter, olive oil, 2 wet garlic, bunch spring greens (around 500g), salt
  • In a large saucepan heat a tablespoon olive oil and a knob of butter.  Cook the bulb end of the wet garlic (chopped) adding a little salt.  Don’t let it brown.  Add sliced spring greens.  Stir and turn for about 5 minutes until wilted.  Add the leaves of the wet garlic (chopped), stirring and cooking for about another minute.
  • Eat and enjoy.

Left to my own devices I would have boiled or steamed the spring greens and chomped through them consoling myself that they were good for me.  Oh what culinary delights I have missed out on in the past.  I learn something new in the kitchen every day.

  1. So are spring greens like spinach or just baby lettuce?
    We have collard greens and mustard greens but those need to be cooked for awhile.
